Palak Paneer is a popular Indian dish made with spinach and paneer cheese. Here's a simple recipe for you:
  • Ingredients:1 large bunch of fresh spinach
  • 1 pound paneer cheese, cut into 1-inch cubes
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 garlic cloves, minced
  • 1-inch piece ginger, grated
  • 1 green chili, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt, to taste
  • 2 tablespoons vegetable oil
  • 1/2 cup heavy cream (optional)

Instructions:
  1. Rinse the spinach leaves and blanch them in boiling water for 1-2 minutes. Drain and transfer to a blender. Blend until smooth and set aside.
  2. In a large pan, heat oil over medium heat.
  3. Add cumin seeds and wait until they start to crackle.
  4. Add the chopped onion, green chili, and grated ginger. Cook until the onions are soft and golden brown, about 5-7 minutes.
  5. Add the chopped tomatoes, cumin seeds, coriander powder, turmeric powder, garam masala, and salt. Cook until the tomatoes are soft and the spices are fragrant, about 5 minutes.
  6. Pour in the blended spinach and stir to combine.
  7. Add the cubes of paneer cheese to the pan and gently stir.
  8. If desired, pour in the heavy cream and stir until well combined.
  9. Cook until the sauce has thickened and the cheese is heated through, about 5-7 minutes.
